Gristle Ratchet Toothed Shearing Ring

The Cozzini EM-1014 Ratchet Toothed Shearing Ring is a replacement wear component designed for use with the Cozzini AR-901 (Model 901) Grinder/Emulsifier. The ring seats within the cutting head assembly and performs a secondary shearing function on tough connective tissue, including gristle, sinew, and cartilage, that the primary knife set may not fully sever during the grinding cycle.

The ring's serrated, ratchet-style tooth profile engages and cuts resistant material before it can pass through the cutting head unprocessed. This action reduces the risk of downstream plate clogging or damage and contributes to more consistent texture in the final ground product.
