Holder Knife 3-blade

The EK-1047 is a stainless steel 3-arm knife holder designed as an OEM-compatible replacement component for the Cozzini AR-901 (Model 901) Gravity-Fed Reduction/Emulsion System. The holder is engineered to position and retain three cutting knives within the grinding and emulsifying head, securing each blade at equal radial spacing to ensure consistent rotational alignment during operation.

In service, the holder allows the three blades to rotate against a stationary hole plate, generating the shearing action required to reduce meat and food products as they are forced through the cutting system. The assembly incorporates a Nylok floater screw to maintain secure blade retention and accommodate controlled axial float during operation.
